You might have seen the television chefs championing the versatility of Verjus over the use of wine or even some of the more fancy flavoured vinegars.
Having been used since the Middle Ages, Verjus (an acidic juice made from unripe grapes) fell out of favour among chefs for sometime but is currently making a comeback. Appreciated in some cultures for its non alcoholic attributes, Verjus is great in any recipe that requires a dry white wine or even as a drink.
While Verjus has been primarily made from grapes, Richard Perton has perfected the recipe by using apples picked from the Brogdale Orchards. Pressed and quickly pasteurised, the apples give the Verjus a unique twist.

Deciding it was unreasonable that the fruit in Kent was so underrepresented, she started making her own jams and chutneys from the best local fruit available. Initially selling only to friends and family, her business has grown to accommodate larger delis and farm shops but she keeps her ingredients of the best quality possible, sourcing all her fruit from Kent.

The 16th through the 22nd of May is Coeliac Awareness Week. It is thought there at least 1 in 100 people in the UK are diagnosed coeliacs. However, many are not diagnosed. While there is presently no cure for this autoimmune disease, the gluten free diet is quite often the path many take.
Gluten can be found in all wheat, barely and rye products, which leaves many people wondering “What can I eat?” In the past, gluten free foods have been medicinal and uninteresting but with more and more people being diagnosed with the Coeliac disease or at least as having a slight sensitivity to gluten, the market has expanded.
In conjunction with Coeliac Awareness Week, we will have a representative from Gluten Free Foods with us on the 12th of May from 12 pm onwards. If you’re interested in finding out more about coeliac disease or would just like to see how far the range of food has come, be sure to drop in! |
